If you want to go Digital SLR, you can't go wrong with either the Nikon D70 or the Canon EOS Rebel (or Rebel XT). Since the 8.3mp Digital Rebel XT was release, prices on the 6.1mp Digital Rebel have dropped to $500 for the base kit.
If you don't want to deal with interchangeable lenses and just want to go with "point and shoot"
Panasonic Lumix DMC-FZ10K
Panasonic Lumix DMC-FZ5
Olympus C-770
Olympus C-765
Canon Powershot S2 is
Canon Powershot G6
Canon Powershot pRO 1
Minolta Dimage A1
Minolta Dimage A2
Minolta Dimage Z20
Minolta Dimage Z5
Minolta Dimage Z3
Minolta Dimage Z2
I'm personally not a fan of the Kodak or Epson Digital Cameras, but they also have their fans out there, so don't discount them.
When you are ready to buy, use www.streetprices.com and plug in the manufactuer and model #. You'll find prices vary by more than $200 on a $500 camera(some have it for $300 some have it for $700).

if that's good enough for you, rock it.
Sounds good to me, I'll have to do some research. What are the prices running?
