last year I did a party up at Kean University up in North Jersey. It was to celebrate the fact they had raised over half a milliom dollars for their scholorship program... and they spent almost half of it on the party... anyway. One of the guys in charge of the program is the guy who founded outback steakhouses. They supplied the food. While I do like outback.. these steaks were out of this world. Thick, juicy, and you did NOT need a knife to cut them. Your fork went right through them.

To cook really good chicken try to make beer butt chicken. Theres a stand u can get from home depot i think. You put half a can of beer or coke whatever its just for moistening. After the spice is on the chicken I use Canadian steak seasoning (mainly use this), Grill creations chicken and rib rub and some sometime I use some jerk. To season I put the seasonings on a plate and put the chicken on the plate and do diff sides. Now put the beer can in the cavity of the chicken and cook until it has the right temp. I think it usually takes 2.5 hrs. The canadian steak seasoning is great I use it to mix in with burgers too, and on steak. I havent cooked good ribs before though

dude, i know EXACTLY what you're talking about. my old roomate had one of those and we'd eat baked chicken at least once a week. i can cook chicken in an oven...just not on a grill. i think i'm missing the part of my brain that lets me think with chicken on the grill...

Who doesn't like to grill, lol. I love grilling so much that I grill in the middle of winter. A good way to keep chicken moist is to marinate it in italian dressing overnight. Use a meat tenderizer hammer and beat the hell out of it first then soak it italian dressing overnight. After you put bbq sauce on you can't taste the dressing for any of you who think it'll make it taste bad.

1 clove garlic, minced
1/4 to 1/2 teaspoon Oriental Chili sauce ( I used sarache "rooster" sauce)
Boil the sauce on medium heat, reduce heat, simmer covered.
Grill chicken 18 minutes flippin once, brush sauce within the last 5 minutes of grilling.
Serve chicken with sauce.....

I cook EVERYTHING on the grill. I've got a nice grill with a fire pit smoker. Fajitas, burgers, steak, chicken, brisket, salmon, catfish............................
I've got some pics somwhere, just gotta find em.......
