Can you use a 5 point harness with the stock seats? To replace the seats and get the harnesses $ > $ buying new stock seat belts and dealing with the electrical problem tied to the airbag.

Stock seats yes. Stock roll bar or belt bar (both not installed) no. You need to have a way to anchor the upper belts above your shoulders. Tying them to a roll bar is one way. Installing a bar just to hold the belts up is another. Neither will be free, but both will prevent your spine being crushed in a crash, the way it could if your upper belts were tied to the floor.
