I started having this problem recently and I think i've pin pointed the time it started to when i changed the tranny oil from the oem stuff to mobil 1 synthectic. Now if i park the car on a slight incline it will roll very slowly and jerky. Well this wasn't an issue till winter came because i'd just put on the ebrake.... well i can't do that during winter or it sticks. I've parked it in 1st and reverse and neither make any difference.

by the jerky manner it's moving i think it's turning the engine over so it's not the clutch slipping.

why is it doing this? and is the only way to fix it to figure out whats with the ebrake and cold weather?

When it's cold outside and the engine (tranny) is cold, when I start the engine and relese clutch in neutral, car wants to drive forward. I think it's because of very thick oil.

that sounds like the clutch is engaging a bit when you let it out in neutral... don't know what would cause that.

when you release clutch in neutral clutch engages (tranny will be connected to the engine)
but primary and secondary shafts will not be connected in gearbox

alrighty I checked the bottle I used about 2.75 (including what was lost when filling) quarts of mobil 1 75w-90

I've also noticed now that it's cold that first thing in the morning shifting is a little hard. but after 1 or 2 shifts it's fine. (i think it was always that way with cold weather though)

Webtech recommend SAE 75W/85W.

I use also 75w-90 and I have the same as you - when it's cold I start the car release the clutch (in neutral) and car pushes forward (tries to move) and stops.
