So my question is if I replace my stock headers for some aftermarket ones do I have to upgrade my gas grade? I believe the manual says 87 is ok stock. But if I modify the headers will it be better to run better grades of gas?

no need to upgrade for high octane gasoline until you either advance your timing or push a lot of air into the cylinders.

you only need diff gas if you go FI or change internals or push timing to the point of detonation/knocking with lower octane
